Blueberries Sorbet

And so I made a discovery..

I mean, it was not a huge discovery, I did not discover a new planet or something, am just saying that I made a discovery about food and myself. 

Because you take some things for granted and you do not just think them through and then one moment BAMMM!!! And it opens a whole bunch of roads.. 

The discovery has to do with sorbet. Because what is in a sorbet? Just a simple syrup that you mix with a fruit puree and you freeze it. 

But the syrup can be more than just a simple syrup... You can infuse it with spices, or herbs, or even use the left over syrup from a Greek spoon sweet that you have left over... Or maybe a tea!!! 

This was my discovery and I grabbed the beautiful tea I had made and got down to business. 

So... I made a simple syrup, used my kick ass tea to give it more Oomph, strained it and used it for the sorbet! 

And it was a killer! 

Let's see what we will need:

Duration:10 minutes prep and 3 minutes cooking
Serves:6

Ingredients

1 cup of sugar (200 gr)

1 cup of water (250 gr)

4 tblsp of tea

150 g of blueberries

a tad of lemon juice (optional)

 

Method

Add sugar and water in a small pan and bring to a boil over medium heat. 

Boil for 3 minutes till the sugar melts.

Remove from the fire and add the tea.

Let it infuse enough time (be careful because some teas are quite potent and you do not want them to infuse as they turn bitter. 

Strain and add the syrup in the blender

Add the blueberries.

Blend the mixture for a few minutes. 

If you like pass it through a sieve. 

Add some lemon juice if you feel it needs it. 

Let it cool down completely in the fridge.

Pass it through the ice cream maker and keep in the freezer. 

Serve with fresh fruit and herbs. 

We can use any tea we like... also instead of  blueberries we can use other berries or fruit.. 

You can make it with strawberry, peach, apricots etc...
