Tomato and Cherry Gazpacho

I had some friends over for dinner the other day and I had this soup photographed the previous day so I had it nice and cold in the fridge.

We are having soup as the first course I said. 

Soup? in the summer? 

Cold soup I said.. 

Oh... ok... Like a Gazpacho they said.. Yes, I replied but with a very different ingredient. 

What is that? Cherries I replied.. 

Oh my they said.. 

They kept mumbling till they tasted it.. 

then they stopped talking and just enjoyed it... 

So.. if you want to be like my friends give this summer soup a try...

Ingredients

Since there are only a handful of ingredients in this soup it is important that they are top notch... 

500 g of tomatoes

200 g of pitted cherries

80 ml of extra virgin olive oil

2-3 tblsp of a beautiful sherry vinegar 

a bit of salt

extra olive oil for drizzling

herbs for decorating.. 

Method

Pass all the ingredients through the blender.

Strain through a sieve

serve in cold bowls or glasses

garnish with olive oil and fresh herbs or flowers
