Almond and Coconut Truffles

My friend Aphrodite called me on the telephone . I hadn’t heard from her in ages. We were at University together and even though we don’t see each other very often, every time we speak it’s like no more than a day has gone by..

Anyway…So Aphrodite is the one who introduced me to the Scouts..you know the boy/girl scouts and the guides! I had started studying to become an instructor and had done two lots of training in Ksilokastro I remember..what we talked about I cannot remember but I do remember the walnut pie they gave us every morning even now….

Through Aphrodite I met the two Eleni’s, young and older, Mary, Tanta in Drama and of course Lefteris as well..they have all been significant people in my life and for that I will always be grateful to her. Besides this is not the first time I have mentioned her on my site..The previous time was when I made the raisins this year…:-)

She told me that she wanted a recipe to put in her newsletter that she could distribute to all the cubs, scouts and guides that even the youngest amongst them could prepare with their parents. She asked if I had an idea and I told her I would find something.

It is not that easy to find recipes that do not require actual cooking or baking and to be simple enough for young children to make.

Truffles however usually fulfil those requirements…

Therefore I thought of a recipe that would be easy with few ingredients that anyone could make.

The ingredients are basically, only three. Almonds crushed, coconut and condensed milk. Of course you could elaborate on the original but they are good for a start!

Let’s see what we need..

Diffuculty: 1 of 3
Duration:15 minutes and one hour in the fridge
Serves:over 25 pieces

Ingredients

1 cup of Almonds (with the peel on) crushed, grated or cut into small pieces

270g coconut shredded sweetened

1 cup of condensed milk

Method

Place all the ingredients in a large bowl and mix together with your  hands preferably wearing disposable gloves.

Put the mixture in the bowl into the fridge for one hour.

Take out of the fridge and use the mixture to form little balls and place on a serving tray.

Some ideas to take the truffles to another level:

We could add vanilla essence or almond essence.

We could add preserved dried fruit or other nuts to the mixture.

At the end we could sprinkle cocoa onto the truffles or even caste sugar or cover with melted chocolate and then coat them with grated dried fruits and nuts.

I hope that you try this recipe with your children.. enjoy!
