Steamed Artichokes in EVOO

Yet one more way to cook and serve artichokes and keep them for quite some time as well. 
And in this recipe I will show you a VERY easy way to process and remove all the hair and petals from the flower... Because artichokes are flowers... :-) Do not forget... 

This is a wonderful Meze type food to share with your friends over some wine or Tsipouro and I try to make a big bunch and keep it in the fridge for months.. 

As for removing the stamen etc it is really easy.. You peel off the outer petals but keep the tender ones and also the stamen. 

You steam them.. In the water underneath the steamer you can add aromatics, herbs etc for extra punch. I used some fennel fronts and also lemon.

Serves:4 as a starter

Ingredients

5 very fresh artichokes

aromatics 

Lemon

EVOO

salt and pepper

vinegar of your choise but do not choose something strong like balsamic etc...

Method

Remove the outer petals of the artichokes and trim. Leave the inner petals and stamen on the artichokes. 
Put them in a small bowl with water and lemon juice and rub with the lemon to avoid discoloring. 

Place them in a steamer. You can add some aromatics (herbs etc) in the ater underneath to give them more of a punch. 

I used the lemon I had in the bowl and also some fennel fronts.

Steam them till a knife goes through them with no resistance. 
Remove from pot and let cool down enough to handle. You can see in the video how easy it is to remove the inner leaves and hair.

Cut them in four and place them in a bowl with EVOO, some vinegar, salt and pepper, pieces of lemon or lemon confit and keep them in a fridge for a few months. 

Serve in room temperature with olives, some good bread and wine or Tsipouro.
