In the article I wrote about Artichokes, I told you that I would be making 3 recipes from this beautiful flower and I believe that each will bring a nice surprise to the table.
I also have to add here that for each recipe I am using a different EVOO (Extra Virgin Olive Oil) from the ones that I really love.
Here is the first recipe that is actually a salad.

Our assistant chef for a few weeks was a great Italian guy that left and moved to another restaurant of the company and I was really sorry to see him go.
Anyway, one day he comes up with this dish of the day, a salad that when I tried it I was in shock because I could not figure out what it was. It tasted like artichoke but if you have never had a product prepared another way in your mind it is so connected to the main recipe that you cannot really picture it in any other way.
It was a simple, very simple salad with Raw Artichoke cut thinly, drizzled with olive oil, salt and thin slices of parmesan. SOOOOO tasty though in an almost magical way.
Since there are very few ingredients it is important that they are perfect...
In my version I use the preserve lemon that I have made.. You can use regular lemon if you like...
