Potato and Egg Salad with Apaki

There is a shop I really love in Athens.

It is called  "Παντοπωλείο της Μεσογειακής διατροφής".

There is no other place in the city that showcases a plethora of Greek products from all over the country... Olive oil, wines, honeys, pulses, you name it!!!

Every time I go there I am impressed because they are looking for the best products all over the country and always they have something new.

Some days ago I found the guy who is in charge of it all George and asked him what new things he has found.

He gave me two small packets. One had Apaki and the other had Syglino. Both are cured pork meat but they are traditionally made in Crete and Mani respectively and both have their own distinct characteristics and both are delicious.

I see the label and they are both from the same company, Weird I thought... and it was even more weird when i saw that the company is based in the north of Greece. Far away from Crete and Mani..

I was rather skeptical, but George laughed, said: Trust me, and of course i did.

Syglino i tried almost the same day and i was amazed by the taste and texture. So i was waiting for the right time to try the Apaki as well and that time was yesterday...

I wanted to have a salad.. I had some eggs from the village and some potatoes that had seen better days. Also I had some greens from Marilena (I will speak to you about her in another post) and all i had to come up with was a nice dressing to serve the salad with.

Olive oil I had one of the best ones in Greece from a guy named Eftihis in Crete and I wanted something fresh and tangy so I thought to use some yogurt.

So what happened you will see in the pictures!!!

Diffuculty: 1 of 3
Duration:20 minutes and 20 minutes cooking
Serves:2-4

Ingredients

Fod the salad

4 eggs

4 small potatoes

good olive oil

salt and pepper

a bit of vinegar

100 g of Apaki or other cold cut

salad leaves

For the dressing

150 g of yogurt

3 tblsp of EVO

1 tblsp of mustard

Method

Boil the potatoes till they are ready and we cool them down at once in ice water.

Cut them in pieces, drizzle them while still warm with olive oil and a touch of vinegar.

Boil the eggs for 7 minutes for soft yolks or 10 for set yolks. Cool them down in ice water and remove the shell.

Prepare the dressing by mixing the ingredients.

Serve the eggs cut in half, the potatoes, Apaki and the greens in a platter with the dressing.

Add extra olive oil and pepper...

I added some flowers from the garden!
