Apricot Ice cream

I love David Liebovitz..  for many many years now.. Great food blogger, great sense of humor, wonderful recipes! If you do not know of him then you must.

Anyway! from his book "the perfect scoop" I took this recipe and played with it a bit. Turned out a beautiful, just beautiful ice cream... Enjoy it if you love apricots. 

The addition of the jam and the bits of dried apricots really are great... 

Also some flowers from spearmint are a good addition. 

Make sure that your fruit are absolutely perfect and rice and bursting with flavor. Otherwise do not bother.

Duration:20 mins prep, 10 minutes cooking and a few hours to wait
Serves:10-12 scoops

Ingredients

500g of extra ripe apricots, seeds removed (net weight)

125g of water

100g sugar (plain)

2 drops of almond essence 

1 tblsp of lemon juice

some apricot jam

a few dried apricots cut in tiny pieces

 

Method

In a pot bring to the boil the fruit cut in 4, the sugar and water.

Simmer for 10 minutes till soft.

Let the mixture cool.

Add cream, essence, lemon juice and blend together till smooth

Put in the fridge and cool completely

Pass through the ice cream maker. 

Before storing in the freezer stir in the dried fruit and jam if you like.
