Chocolate and Cherry Cake

I wanted to post a beautiful chocolate cake I make, but to be honest after the whole time with the lockdown and the corona virus and everything that happened after that I was just quite depressed and the only thing I wanted was to watch Ru Paul Drag Race and pig out on chips etc etc..

But I feel a bit better now so I am becoming a bit more active so here goes nothing..

Basically this cake is quite easy to make and with few ingredients. And that is the catch. Because for a recipe that is that simple and with few ingredients it is important that these ingredients are top notch.

There are a lot of cocoa powders out there. Some are very cheap and some quite expensive. Buy the most expensive organic cocoa powder that you can.. It makes a huge difference in the cake. Trust me!!!

Also there is no need to syrup the cake as the oil and the cherries keep it quite moist. Also keep in mind that the cherries are not exactly going to stand out alone in the taste department and chocolate is quite overpowering but they will bring out a little something for sure especially when you bite into them.

Let's see what we will need...

Diffuculty: 1 of 3
Duration:30 mins prep and 60 mins cooking
Serves:10

Ingredients

200g all purpose flour

80g cocoa powder

5g salt

8g baking powder

3 medium eggs

125g neutral tasting oil

300g sugar

100g Greek style yogurt

200g milk full cream

170g chocolate cut in tiny pieces

300g cherries with out pips and cut in 4

For frosting

200g of single cream

30g caster sugar

20g cocoa powder

chocolate sauce for serving

Method

Pass through a sieve the flour, cocoa powder, salt and baking powder into a bowl.

In the bowl of the standing mixer we beat the eggs, oil and sugar till it comes to the ribbon stage and mixture is nice and silky.

In a bowl we mix up yogurt with milk.

In another bowl we add the cherries and chocolate and 2 tblsp of the flour mixture and mix all together.

Add in the standing mixer's bowl the flour mixture in 3 parts  and milk mixture in 2 parts alternating and starting with the one third of the flour mixture.

Finally add the cherries and choc mixture in the bowl and mix with a spatula.

Transfer the mixture in a buttered and floured cake tin 23Χ10Χ10cm and bake for an hour.

Remove from the oven and let cool for 10 minutes and then remove from the tin and let it cook down on a rack.

Meanwhile beat the cream with sugar and cocoa powder with it thickens and serve the cake with that, extra cherries and chocolate sauce...
