There are those people that you feel indebted to. And without knowing you well they take you by the hand and share with you knowledge, experiences, contacts.. And all of that without waiting for anything in return. I have been blessed to meet 3 of those people. Vasilis Kallidis, Makis Vasiliadis that I will talk to you about another time and the third one is Yanna Balafouti.
I met Yanna online while she still had her company Pyliaki Gi and at one stage we met face to face. Then we got a bit closer as we have the same kind of crazy dog and to make a long story short I intend to have an interview with her in September that you will read here. So, Yanna introduced me to a lot of nice people, incredible producers of Greek products starting from the Gourmet Exhibition in Thessaloniki organised by mr. Stefanidis.
In that expo I saw Alexandros Alexandrou again from the island of Limnos who introduced me to Nikolas Paterakis another Lemnian who grows aromatic and medicinal herbs on the island under the name Aegean Organics. Also where my father comes from on the island of Evia they gather wild oregano from the mountains but the passion I saw in Nicola's eyes about his products is rare and the love that he has for his island really shows. He gave me some samples and you can really see what makes them so special even without opening the package.
A few days ago in the island of Lemnos there was a big food festival called "Lemnos Philema" a feast for your eyes and tummies with wonderful products and great food! I was not able to attend and felt a but jealous I must admit. I hope I can make it next year!
But I talk too much I know... Anyway... I thought of making an ice cream that will remind me of Lemnos and it's products and decided to make a thyme flavoured ice cream using some of the thyme that Nikolas gave me.
The aroma of thyme is really strong in the ice cream and also I have to add that it is somewhat bitter. But you know how much I love the bitter tastes... Also there is no sugar in the recipe, just some honey and there is some salt so in a way it can be a bit savoury... If you want it plainer then I would suggest to add some sugar and maybe add less thyme.
So let's see the recipe!
