500 gr Almonds
240 gr Granulated sugar
90 gr Water
Put the almonds in a baking tray and put into a pre-heated oven at 140 degrees celsius for 15 minutes until well baked and the aroma is evident.
Meanwhile in a saucepan put the sugar and the water and boil the mixture for 3 minutes on a medium to high heat from the moment the sugar melts.
Put in the baked hot almonds and start to stir with a wooden spoon.
Stir well and often.
At some point the the syrup crystallises and covers the almonds like sandy dust.
You can stop there and you can eat them like the snacks that the street sellers peddle that you have wondered -how did they do that?- you can also put some herbs into the mix and give them more flavour.
We carry on stirring and the sugar slowly melts again and covers each almond.
When all the sugar has melted and every almond is evenly covered we put them on a baking tray covered with greaseproof paper and allow to cool down completely.
They can be stored in a jar for days in which you have placed an inch of rice in the bottom to soak up an moisture there might be.
